What's w/all the truck food lately?

I'm not complaining and I'm not talking about "street meat."
I'm talking about delish desserts served from a truck window. There's the coffee truck in Union Square, often parked in front of Coffee Shop (ironical?) (My friend S and I from college/law school discovered it by the way, Coffee Shop, not the truck. I swear. It didn't exist until we went there. Believe whatever you want). There's the Treats Truck (where I'll be going later on my way to/from L&T (getting long black gloves bc mine have vanished since last winter...plus long gloves are required this year w/all the shorter sleeved coats), and there's the other one I posted about last week.

So there's a few driving around. I personally think they're all copying the brilliance of the roving clothing store (operated or started by some girls that went to the same high school as my brother!). BUT, that mobile home/truck/store settled down and now has a store front. Could that be in the Treats Truck's future? Who knows.

In Brussels the street waffles were GROSS! However, one I had in Florence this summer was so delicious I dreamt about it! YUM! So who knows.
