Tailor - An experience in "molecular gastronomy"

So I went last night with a friend from highschool and we had a great time, because old friends always do, but i think we both left hungry.

The menu is divided into Sweet and Salty. Fine enough. Each side has abt 6-7 items, all of which are appetizer size and small even for that. It's one of the resots with foam and gelee and crunchy coffee(more abt that later) so you have to be ready for an adventure.

The drinks were good! A very VERY interesting menu. It's like jelly belly jelly beans (I've been to the factory (don't ask) and they won't tell you how they get the magical flavors in there, and I'd imagine this chef won't tell either) but not just the flavor, here the textures of the food have been altered and played-with. Like the crunchy coffee, which is EXACTLY what it sounds like. We got red pepper jelly candy, which is really that passover candy goopy jelly ring stuff, like Turkish Delight but grosser. Anyways, so it's red pepper flavor. I'm expecting spicy, but no. It tasted JUST like red bell pepper, JUST like! Bizzaro!

What else, oh, one of the drinks was whisky or Bourbon with smoked coke. Yes, smoked coke. So i asked for a taste, and guess what. JUST LIKE coke, cold and wet and coke-tasting but SMOKED. And not like bacon smoked, but like the freaking coke had been thru a smoker machine thing. VERY odd.

Here's the list of what we ordered, thankfully provided by my friend (I don't like to use names, except for Joel, the blog creator, and A for my husband and lamereubu for my mom but only bc people are crazy nuts about their privacy these days and I'm not sure anyone wants to be googled...not that anyone I know does that...ever...all the time...):

They should leave a menu on the table so you remember the variety of flavors and textures you are supposed to be eating.

whiskey with egg whites on top- that's her drink, I do not like whiskey and this was quite tasty
smoked coke- see explanation above, coke that's smoked, believe it!
scrumpy- apple cider in the UK, like colour and favour, but scrumpy=apple cider. this was my drink with some pink clove something and vodka. good, but I was too hungry to drink the whole thing.
snapper with watermelon- (Salty) tiny piece of fish w/long, jicama shaped pieces of watermelon
foie gras with peanut butter - (Salty) the whole thing tasted like peanut butter.
panna cotta tube & corn ice cream- (Sweet) don't remember the, oh yeah, duh, caramel panna cotta but shaped like a tube and corn ice cream (but it was one of those things where you're saying what flavor is this? what is it? then some memory is sparked and it doesn't really go and then you realize what it is...)
butter tube- homemade butter in same shape as panna cotta, with delish cinnamon/raisin bread
banana and wasabe- (Sweet) caramelized banana and wasabe flavored ice cream (don't know if we're guessing on the flavor bc it was spicy (which isn't a good combo for ice cream) or if that's been confirmed), this was OK too.
bell pepper flavored gum drops - see above for explanation

This is getting long, but it was quite an experience. I think it'd be a perfect place for drinks and 1-2 snacks before real dinner. Cool place, SO cool there was no sign on the door, and everyone knows that's how you know!

Just read this on an example of ridiculous things on menus: Cayenne pepper-infused, freeze-dried chocolate nuggets bathed in marshmallow-star anise foam: There are maybe two or three decent practitioners of molecular gastronomy in the world, so unless your name is Ferran AdriĆ  [no idea who he is], leave the foam on your latte.

UPDATE: This post gets longer and longer...I just saw this review which may (i haven't read the whole thing yet) shed some light on the whole molecular blahblah whatever. Food is Foam, Foam is food, coffee is crunchy, whatever. I just don't wanna be hungry. The waiters uniforms were cool...like pinstripe-y "tailored" clothes.
